Came out of a garage in California after sitting from 1969 till 2008.
Put in a '64 413 and 727. Looking into wide whites over the winter.

That is one helluva Plymouth! '58 9-passenger Sport Suburbans don't exactly grown on trees! And yours is a great color, and with Sportone too. Nice upgrade to a later wedge motor.

    I've got a rusty beater '57 2dr Suburban myself.

I have a '57 2 door Suburban as well. Horrible rust, especially in the drip rails, which have almost rusted completely away. Are these repairable???

It's usually easier to replace the roof, if any inner structure is badly rusted. I've restored a few and needed to do that to one. 4-door wagon roofs also use the same outer skin and drip rails.

the inner structure appear ok, if you mean looking from the outside in? As for replacing the roof, this sounds like quite the undertaking!

over the winter plans call for a 511 inch low deck stroker, and a/c. hope to have a low 11 second 9 passenger killer! all the while looking like grandma's wagon.

Talk to someone with a sheetmetal brake and a shrinker-stretcher.
Have a 90-degree angle made out of sheetmetal of Your desired thickness, then have Your bends/curves matching to the contours of the existing drip rail shrunken/stretched in. Cut out and replace rusted drip rail as needed.
