I have a 1953 Rocket Olds engine and I'm going back and forth between trannies. At first I wanted to use a Muncie behind the Rocket but now I'm thinkin' Hydro. I can get my hands on a Pontiac Strato Streak engine and Hydro (1955?). Can I bolt the Pontiac bell and Hydro behind my Rocket without any problems?

Yes. One of the advantages of a hydramatic is the detatchable bell housing that allows transmissions from different makes to be interbred like you suggest.
