Frank Palmer would definitely be a good choice. He's done some killer stuff. Another good choice is David Guymon...he's right on the TX / OK border off of 75. Another great guy that's done some awesome stuff. And from the pitures I've seen, Flyrite did a hell of a job on the shoebox they just did a few weeks ago. Really, what it's going to come down to is how much money you want to spend. If you wanna save a bunch of money and try it yourself, there's several guys in the DFW area that would probably lend a hand for beer and a meal or two. Where exactly are you located anyway? DFW is a big area...
I am located in Arlington over by the Parks mall. Im friends with "bump" who has a chopped 49 that Palmer did. I really like the way it came out. Ill probably contact a few other people to see about price and thing like that. I was thinking in the range of 3-4k. I guess we'll see.

Hey TxShoebox, don't know if you have found anybody to chop your car as of yet. Just wanted to give you another option. Aces & Eights in Bracken Tx. (essentially in San Antonio suburb). There is a 49' there that Sideburns owns. We (I helped)chopped this monster just over 7" in the front, 6" in the back. It is using glass all around, not plastic. We made it a hard top, and basicly did some stuff that others were saying could not be done on this body. The car has too many other little mods to list, but you should contact Sideburns and inquire. Just to give you some options. There is a right way, and a wrong way to do everything.
