Well, assuming you're leaving the rest of it stock and just adding what should be a real lumpy cam, headers?? I would do a dual plane intake and probably no more than a 600cfm carb. I like Edelbrock carbs for the simple reason of basically out of the box and on the car and down the road. If it runs rich you just change the internal springs and likewise if it's too lean.600 should flow plenty of air for the 289. That said if you run headers, run a 2 1/4 in. exhaust for max. flow but no more than that.

Holley 650 should be plenty, had good luck with one on a built 351W H.O. I did. Dual plane or Edelbrock Torquer style intake with that RPM range for a cam, Weiand has a nice dual plane high rise these days. And, just a little trick, if it doesen't come with it, cut a little notch out of the split if you get a dual plane about 2" by 1" or so is usually good and do it towards the secondary side, this really helps on the higher RPM and we all know 289s like to rev.:D
