I was going to make some U-bolt plates for my 47 Ford on the laser cutter at work, I got all the dimensions from speedways site for the Posises 2030 u-bolt kit except for the material thickness. Does anyone know what thickness they use, or what would be a suitable size?

Yes! 3/8ths main plate thickness would be the minimum.
Here's an idea for building your own.
Notice how plate spacer thickness can vary as needed.

    Here's a photo of a a 1941-48 Ford rear spring bar clip. Part # 11A-5709-B.
Measures 2.90 in. from center to center of holes.
The 1935-48 Ford front clip bar is # 11A 5458-B. Measures 3.24 in. between center lines of holes and has a different configuration. Pictorial drawings of each are shown in 1928-48 Ford Chassis Parts and Accessories Manual, also known as the Green Bible below. Keep in mind the amount of torque required so, make your ears thick enough so they don't bend. 80 foot.lbs. is common. I think the originals were forged. Hope this helps in making your own.

I have a set of stock plates at home, but I'm using the speedway lowered crossmember which is wider than stock.

I've got to agree with 19Fordy. 3/8 minimum on the plate on that.
