This is the exact same tray that is in my truck. What is the correct hold down for it? Also what is the correct size and type of battery that fits this tray and will work good with a stock 60 with a few newer options?

I don't know what the correct hold down is, I suggest you use google images to look for underhood pictures of restored trucks.
Looks like it's long enough to hold a 27F battery, doesn't it? |

That looks correct, but it is missing the hold down which is a bracket on the right that goes over the battery to a long bolt on the the left (looking from the front of vehicle). Check out Ford Trucks .com for pictures in the 57-60 section.
