A lil sample

Horseshoes
These are a hometown original, created years ago by the chef at the "The Red Coach" in Springfield, Illinois on North Grand. It's one of my favorite memories as a kid. This is my take on them.

1 1/2lbs ground beef
1 package frozen steak fries (or homemade)
6 slices of Texas toast or other thick bread

Toast bread until crisp.
cook to taste 6 hamburgers
fry up the French fries.
keep both warm while making cheese sauce.

Cheese sauce
1/4cup butter
1/2cup flour
4 1/2cups milk
1 1/2lbs sharp cheddar cheese shredded or chopped up into small chunks (Velveeta would be fine)
2teaspoons Worcestershire sauce
Cayenne pepper to taste
salt and pepper (taste before adding)

Melt the butter in a heavy saucepan.
Stir in the flour, cook over low heat, stirring, 5 minutes.
Gradually stir in the 4 cups milk slowly.
Stir and cook until thick.
Add the cheese stirring until melted 3 minutes or so, or until the sauce is smooth and hot. add the Worcestershire and hot pepper sauce.
If it gets too thick add a little milk to thin.
(I have been know to add chili to the cheese sauce about a 2/3 cup)

This is how it goes together: toast, hamburger, lots of cheese sauce then the fries on top.

And yeah I shoulda clarified that about it's origin. I figured what the hell, that was what I was always told when I was a kid. I'll make the change before it goes to print though. Zeke, I know Cantrall well...been through it many times when I was heading north on 29. I was born and raised in Springfield, just moved to Missouri earlier this year. Cool to come across another former central Illinoisian on the HAMB.

By the way, if you didn't know, the Red Coach closed a year or so ago...kinda sad. But, Norb Andy's Tabarin downtown still serves a mean horseshoe...

Since the drags food crew is now basicly defunct any funds raised should go to help JimC with his HAMB Drags Burger Bash. Tman is the funds treasurer anyway so that will still work out.

Lets see, after last years bills we have no treasury.

I am building a house this year and doubt I will try and make the drags. Priorities man, priorities.

I do know Jim wanted to do our deal at his place since we were footing the labor. Now, it looks like Zeke and I will both be MIA from the drags.

I will tip my hat and step back. Someone else can take the reigns if they like.
