I have a 7/8" bore, remote reservoir master cylinder I have considered using on my '51 F-1( volare IFS, 8" ford rear). Is it going to be big enough to work properly?

A really easy one to remember is to match the master to the FRONT brakes, whatever they are.
So, you need to purchase a Volaré master.
The rear wheel cylinders can be changed to match to characteristics of the front; ie: if the rear locks too easily, change to a smaller bore, if the rear won't lock at all, go up in size. It's all leverage, you are pushing with a certain bore, and the receiving bore transmits the force. Larger receiver will push harder, but less travel, opposite for smaller. Travel doesn't matter too much for brakes, within reason. And if you're that close, it'll be OK.
Wheel cylinders are available in many sizes, but you'll have to match the external dimensions, as application won't help here.
