Big thanks to all who helped with the food, you know who you are. A VERY SPECIAL thanks to the Franks, Fatcat & Enjenjo and the RRT, thier BBQ Grill saved the night!!!!
SHort story for those that dont know, we cremated a pig, it got too much oxygen! http://www.jalopyjournal.com/ubbthreads/images/graemlins/blush.gif So w/o missing a beat Frank said The RRT grill was there and to the rescue. Mel and I ran to town and loaded up on some prime http://www.jalopyjournal.com/ubbthreads/images/graemlins/grin.gif burgers. Frank did the cooking whith Zeke and I stayed out of the way and rounded up empty bellies. Thanks to all. No fuckups next year.

Hey, I am the guy who had to clean the pig hole and haul my wood home in a trailer. (that statement does not sound good) I hope I was not misunderstood.

Yes, Enjenjo deserves a HUGE pat ont he back for not only bringing the coolest BBQ trailer that was ever built but for standing over that hot grill flipping burgers. Many, many thanks to ALL those that help with the food from begining to end.
My suggestion for next year is screw the pig, lets just do burgers, dogs, and sasauges with all the fixins It will be a whole lot cheaper, less prep, less work, less waste and less chance of screw up.

How about an alternate idea on cooking Pigs in the ground? I have never seen one done quite like that...
Back when I was younger, we had a Pig Roast every summer. We dug the hole, lined the bottom with big rocks, and built a pretty hot fire around midnight keeping it going until about 6:00am. We pulled "All" the wood and and coals we could get out of the Pit before dropping in the Pig. The Pit was then covered with Corrugated Tin (Barn Tin), and that was in turn covered with several inches of Dirt for insulation. About 8-10 hours later, we pulled the pig out and unwrapped it.
As for wrapping the Pig, we spread the chicken wire, layered it heavily with green Field Corn stalks, centered the pig on that and wrapped it up carefully to keep an even layer of corn stalks around the pig. The moisture in the corn stalks keeps the Pig from getting enough direct heat to burn, and also helps steam the Pig. We also filled the body cavity with potato's and Onions before wrapping it up.
Generally, when we cooked a pig like that, it fell apart in a pile when we unwrapped it. We usually just threw the whole thing on a piece of plywood over some sawhorses, uwrapped it, picked the bones out, then let everybody serve themselves from the pile. About the only thing that has to be cut up is the tenderloins, everything else just pretty much falls into a pile...

Did the hole clean up OK? it was too hot when we left the drags to do anything about it.

As for the way we did the pig, it works great, if you seal it up right. our tin was too small and I didnt get that part right, my fuckup. And the pig looked fine until Zeke "probed" it, dont ask. It fell apart like a mummy then!

As for the Food Crew budget, We have 8.48 in the coffers without paying for the hole that got dug. Tony got ya covered, John, PM me about that hole (that sounded as bad as your wood!?
And dont be too quick to forget how well the pig was in 03!? Maybee we go back to that smoker rig?
Also, the only folks that camped to help were Mel and Bugman. Assdragger and Greezy drove all night to deliver the pig at 6 AM! thats 2 years in a row for Assdragger, last year he dropped the pig off at 2 am and drove right home cause he had a booth to get his truck painted the next day. Andy they asked for nothing.

Ryan, Thanks for a great weekend, I had a blast (even though I spent most of the weekend working on Greezy`s A-bone).
Met alot of great people and couldnt have asked for a better weekend! Next year I will bring out the Tcoupe and mop Greezy`s ass....cant wait!!

Tman,Wz Junk,Enjino,Assdragger, and others, thanks for all your envolvement toward getting all those guy's fed. It was a knockout by all. We have plenty of time to plan for next year.
It just gets better and better.
Myself, I try not to make a PIG of myself, knowing there are others behind me who need to eat also. When I went thru the line I noticed LOTS of people who were doing the DOUBLE BURGER THING. (YOU KNOW WHO YOU ARE) Next time make sure to be considerate to those who labored all day so you could get fed.
Enough of my rant. Thanks again guys, for a job well done.

I'm just sorry I got there so late. Most of the work was already done as far as getting the pig in the ground so thanks to all envolved with that.
I'm down with doing a more buffet like thing next time with burgers brats and some pulled pork. both me and Trent should be racing next year so it needs to be less labor intensive on our part so we can get some passes in.
Enjenjo was having some fun asking me some rookie cook questions while we were doing prep. I don't get that to often anymore so that was cool. I had fun cooking with ya Frank and yer Mrs. Good peoples

Enjoyed doing it, just my contribution to the Hamb drags.I'm just happy we could come up with a backup plan, most people weren't aware there was a problem until we served the burgers. Even though it was the RRT Grill, I think you and Frank Jr are HAMBers to the core. You two (and that darling Shelby) are some of that have been to both HAMBdrags. Not many HAMBers can even say that. Thanks to you, this is your glory post.
