My rear coil over shocks, set at ride heigth, are all the way at the bottom of the adjustment, Can I cut off a coil or 2 without damaging them, or should I just leave em alone????

I think they won't work right if you cut them. They have to have the last coil flattened to seat on the adjuster. Cutting them would also make them stiffer.
Leave em alone like Model A Vette says.
They'll settle in a bit and then you'll want to crank them up to return to the preferred ride height.
Keep in mind that coilovers are limited in their travel.
You can get an idea of how much travel by measuring the inner shaft when the coilover is unloaded.

I bought some used carreras and I got springs to fit them made by AFCO at the circle/dirt track racer store. They come available in different load weights from about 75 lbs. per inch (of spring travel)to about 300 lbs per inch. overspray
