Where is the temp guage sender mounted? On the front left manifold like a SBC?
I have to oder an extended capilary tube for a temp guage and can't go check my motor to see where it needs to reach to.

Down on the side by the oil filter

Sorry, I own one but it is still in the donor and I haven't looked at in a few months. I don't even know where the filter is. Front drivers side?

the oil pressure capillary goes down by the oil filter.
temp capillary either goes into the head or into the intake manifold by the t'stat housing.

It'll go anywhere it can get in the water jackets on the intake or heads. All manifolds are a little different, what kind do you have?
I prefer the crossover in the manifold near the thermostat, I believe it reflects water temperature better than between the exhaust valves on the head..
..really it's all relative, what you are checking for are unusual readings, regardless of where you actually get them.
but what do I know?
